This is made by culturing the milk, and warming it in the vat to 29 degrees celsius. When thickened, 12 - 24 hours later, it is set on the draining table. After draining (another 12 hours) it is put into the walk in cooler.
There is no rennet in it.

The blade roast is from the shoulder area of the animal. The tenderness varies because it consists of different muscles. There is a channel of fat running through it.  The short rib and cross cut roasts are also from this area.

The cross cut roast is from the shoulder area of the animal, along with the short rib roast and blade roast.  But the cross cut has no fat running through it.  It is a lean roast and tender.

The Eye of Round roast is the most tender of the muscles in the back of the leg.
This is a medium tender roast because this area of muscles do some work.  It is very flavourful.
It is best cooked at high heat and seared, or slow roasted, braised, simmered or poached.

This roast is the most tender because it is from the back of the cow, where the muscles don't do much work and it is boneless.  All our beef is grassfed.

The rump roast is from the back of the cow, along with the eye of round and steak roast.  These roasts are medium tender because the muscle does do some work.

The sirloin tip roast is cut from the hindquarters, adjacent to the sirloin. The sirloin tip roast is flavorful, but like most lean cuts, it can be tough and should be braised or stewed.

The round  steak is from the rear of the animal.  This steak is not as tender because the leg muscle is well used. 

The meat on these bones, along with the marrow in the bones makes for a nice broth.

DNA's burger patties are from Highland cattle, grazed and hay fed only. 5 - 6 ounce patties to a stack and 6 stacks in this box, for a savings of $25. Ingredients: beef,water, toasted corn and wheat crumbs, corn flour, salt, spices, MSG, Hydrolyzed plant protein, vegetable oil.

We bought turkey poults from Frey's Hatchery and fed them organic grain (which included corn and soy). They were housed in moving shelters, always having access to grass. As larger turkeys we allowed them to roam outside their shelters.
They are beautiful (and ugly) and friendly and make funny noises. We heard stories about how difficult they are to raise, but we didn't lose any birds while raising them.
